Penelope's Boxty Bread

In the old days, Boxty was a traditional Irish potato dish served on the eve of All Hallows' Eve or, as we know it, Halloween. Boxty on the griddle (fried) is called boxty cakes. If it is baked it is called boxty bread. It was served with butter, milk, and salt.

Make scones with adult supervision and permission:

Materials

  • 1 lb. raw potatoes
  • 1 lb. (2 cups) cooked mashed potatoes
  • 1 lb. (4 cups) flour
  • pinch salt and pepper
  • 4 oz. (1/4 cup) melted butter
Instructions

Make sure to ask for permission to use your kitchen before you start! Have an adult around to help out.

Peel and grate the raw potatoes. Put them in a clean dishtowel and ring them hard. Remove as much moisture from the potatoes as possible. Mix the raw potatoes with the mashed potatoes and melted butter. Salt and pepper to taste. Add flour, knead, and roll out. Shape them into flat cakes. Put them on a greased cookie sheet and bake at 300 degrees Fahrenheit for 40 minutes. Serve hot with butter.

For a Canadian twist, add 1/4 cup chopped onions and bacon bits to taste to the mix. Bake. Sprinkle shredded cheddar cheese on the top five minutes before they are ready. Broil until the cheese is melted (about 1 minute). Serve with sour cream as a dip.
